Andaz Maui at Wailea Resort Chef Mi Jin Kang Places 3rd at Hyatt Culinary Challenge
Competing against 12 regional champions, Andaz Maui’s Mi Jin Kang claims 3rd prize in Hyatt’s Americas Hawaii The Good Taste Series competition
MAUI, Hawaii (October 29, 2015) – The Good Taste Series announced the finalists of its second annual competition featuring Banquet Chef Mi Jin Kang of Andaz Maui at Wailea Resort in 3rd place. Judged by a panel of food and hospitality industry veterans, the 12 contestants prepared two food items that incorporated local ingredients, regional influences and represented Hyatt’s global food philosophy, Food. Thoughtfully Sourced. Carefully Served. Each plate was judged on taste, presentation, technique and authenticity.
“We are extremely proud of Chef Mi Jin Kang and all of the competitors who represent the fresh, creative talent at Hyatt hotels and resorts in the Americas,” said Susan Terry, Vice President, Culinary Operations, Hyatt, Americas “This innovative competition is centered on developing sous chefs at Hyatt hotels and resorts, and it helps showcase not only our culinary talent, but also our commitment to our guests’ overall culinary experience,” Terry added.
Chef Mi Jin Kang presented two plates, in two categories. In the first category, Chef Mi Jin Kang was inspired by churros and empanadas and created a “churropanada” with a pork and roasted corn filling. Showcasing her Korean heritage, Kang fermented local vegetables and paired the dish with nopales kimchee that had cilantro stems and jicama.
The second category was seafood, and contestants were required to incorporate both a local and sustainable seafood product in their dish. Chef Mi Jin Kang presented a Hawaiian and Guam inspired dish, paying homage to her two homes, and made a Hiramasa poke with fried garlic, Huitlacoche yogurt, caviar, Serrano peppers, and a forbidden rice cracker.
“Being a finalist at one of the most respected culinary competitions is such a tremendous honor. Beginning my career as a line cook to now cooking with some of the most respected chefs in the industry is just a surreal yet humbling experience,” said Andaz Maui at Wailea Resort Chef Mi Jin Kang.
